“Grate” Zucchini Bread

  • ¾ cup whole wheat flour
  • ¾ cup unbleached white flour
  • ½ cup sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon ground cloves
  • 2 eggs
  • 3/8 cup (6 tablespoons) vegetable oil
  • 1 ¼ cups packed, finely grated unpeeled zucchini
  • 1 teaspoon vanilla
  • ½ cup finely chopped nuts
  • 1/3 cup raisins

Instructions

     In a large bowl, combine all of the dry ingredients.  In a medium bowl, combine all of the wet ingredients.  Add the wet ingredients to the dry mixture and stir until well mixed.  Stir in the nuts and raisins.  Pour the batter into a greased 9x5x3-inch loaf pan.  Bake in a preheated 350 degree oven for 50 to 60 minutes or until a pick inserted in the center of the bread comes out clean.
